Tonight we had Taste of Home’s Lasagna Roll Ups for dinner. David and I both love this yummy recipe, and I think it’s easier than traditional lasagna. It only has a few ingredients, and I usually already have everything for it on hand. (I do have to make a confession though. Tonight’s Lasagna Roll Ups were easier than normal, since I already had some made up in the freezer with extra sauce!)
I modified the recipe a little from Taste of Home’s recipe, and I also used a homemade sauce recipe instead of a jar of sauce.
Here are the recipes:
Lasagna Roll Ups:
(adapted from Taste of Home)
10 lasagna noodles, cooked
1 lb. ground beef, cooked
6 ounces cream cheese, softened
26 ounces spaghetti sauce, divided
1 cup mozzarella cheese
1/2 cup cheddar cheese
1/2 cup Parmesan cheese
- Stir together the cooked ground beef, cream cheese and 1/3 cup spaghetti sauce.
- In a separate bowl, mix together the mozzarella, cheddar, and Parmesan cheeses.
- Spread 1/4 cup of the meat mixture on each cooked lasagna noodle. Sprinkle with 2 Tablespoons of cheese mixture on each noodle. (Make sure not to spread the sauce/cheese too close to the edges of the noodles.) Roll up each noodle.
- Pour 2/3 cup spaghetti sauce into the bottom of a 9 x 13 baking dish. Place the lasagna roll ups seam side down in the dish. Pour remaining sauce over the noodles in the pan and sprinkle with remaining cheese.
- Cover and bake at 350° for 20 minutes. Uncover and bake for 15-20 minutes longer.
For the Pasta sauce I used this recipe: Family Favorite Pasta Sauce from Taste of Home. The only things I did differently was to leave off the meat (because I already have some in my lasagna) and substitute the brown sugar in the recipe for honey. This pasta sauce is really, really good and not difficult at all!
I also had this Acorn Squash recipe from laurenslatest.com as a side. David does not like acorn squash, so it doesn’t matter to him how I fix it since he’s not eating it! However, I really like the recipe. I was trying to find a good, easy recipe for squash that I don’t have to go out and buy a bunch of ingredients. All you have to do is slice the squash in half, mix up in the ingredients, pour them into the squash and bake! This recipe is so good and acorn squash is a great (cheap) vegetable this time of year.
