Last night, I was supposed to post a recipe to the blog. However, we ended up throwing away the leftovers from last night. Yes, it was that bad. I tried the Pumpkin Curry Chicken and let it suffice to say that some things should just not be mixed. Especially when they look like this recipe did. I had a bad feeling about this recipe to begin with, but I shrugged it aside in the name of my addiction to pumpkin. I had the same bad feeling when I started making the dish, but I just kept making it, convinced that it would be better when we tasted it. It was not. It had great reviews on the site where I found it, but I guess there are just some kinds of food we’ll never like! David and I were both a little gloomy yesterday (maybe it was the rain ALL day!) and then we topped it off with a disgusting dinner. 😦 Oh well, there’s always tomorrow…
…which brings me to tonight’s recipe. I was a little nervous about tonight’s recipe to begin with. It has green onions and cheddar cheese…in waffles! After last night’s disaster, I wondered if I should even try this new recipe or stick with something I knew we would like. However, the recipe came from laurenslatest.com, and she consistently makes up great recipes. I have never had a bad tasting recipe from her blog, so I thought I would give it a shot tonight with Savory Scallion Cheddar Waffles and Hash-Browns. It did not disappoint. David was also a little nervous about the waffles once I told him the name of the recipe, but he loved them as well and especially loved the hash-browns!! I didn’t put syrup on mine, only butter, and they were very tasty. David put butter and syrup and liked them that way as well.
The recipe is very easy, you don’t even have to separate an egg! The only change I made was to use half whole-wheat and half white flour. I couldn’t taste the cheddar in them very well, so I think next time I’ll use a sharper cheddar. I had some mild cheddar that I needed to use up though.
The hash-browns are also super easy. Just microwave the potatoes, then cut them up and cook them in butter with some onions, salt and pepper.
Savory Scallion Cheddar Waffles

1 cup all-purpose flour
2 teaspoons baking powder
1/4 teaspoon salt
1/4 teaspoon pepper
2 Tablespoons sugar
2 Tablespoons oil
3/4 cup + 2 Tablespoons milk
1/2 cup cheddar cheese, grated
1 whole green onion (white and green parts)
1. Preheat waffle iron
2. In a large bowl, combine flour, baking powder, salt, pepper, and sugar.
3. In a separate bowl, combine egg, oil, and milk. Stir into dry ingredients just until everything is moistened. Fold in cheese and green onion.
4. Spray waffle iron with non-stick cooking spray and spoon batter onto iron, following waffle iron directions.
