Cinnamon Glazed Popcorn

Some nights I don’t feel like cooking a whole lot…we have leftovers when that happens…and POPCORN! šŸ™‚  While it’s not exactly a meal, it sure tastes good and fills me up!! We had one of these nights a couple of nights ago.  David had leftovers, and I had popcorn.  I didn’t have just any popcorn however, I had cinnamon glazed popcorn(from 100 days of real food blog).  It was sooo good!  
Lisa Leake’s 100 Days of Real Food is a blog about a family who decided to eat only “real” food.  They eat no processed food or refined ingredients.  It’s quite inspiring and while I’m not there yet, it has given me motivation to make a lot of changes to our diet. This Cinnamon Glazed Popcorn recipe comes from her blog, proving that non-processed/refined foods actually can taste good!
You can use microwave popcorn in this recipe, but I would try to get it without butter and then skip the salt in this recipe.  However, stovetop popcorn is super easy and it doesn’t have all those extra ingredients that microwave popcorn has.  If you’re not sure how to make stovetop popcorn, head over here for a guide.

 Cinnamon Glazed Popcorn
(adapted from 100 Days of Real Food)
1/4 cup of popcorn kernels, popped
3 Tablespoons butter
2 Tablespoons honey
1/2 teaspoon cinnamon
1/4 teaspoon ground ginger
1/8 teaspoon ground nutmeg
1/4 teaspoon salt

Melt butter and honey in small pan over low heat.  Add cinnamon, ginger, nutmeg, and salt and stir to combine.  Pour popped popcorn in large bowl.  Drizzle honey mixture over popcorn and stir well to coat popcorn.  Pour glazed popcorn onto a cookie sheet lined with parchment paper.  Bake at 325Ā° for 6-8 mintues, stirring every 2-3 minutes to make sure popcorn is not burning.  Let popcorn cool before serving (it gets nice and crunchy after it cools.).
