Baked Apple Cinnamon Oatmeal

Every now and then I like to switch it up for breakfast.  I get tired of eating the same old thing every morning.  So when I stumbled across Simply Scratch’s Baked Apple Cinnamon Oatmeal, I couldn’t wait to try it out.  I like oatmeal for breakfast, but this baked oatmeal is terrific!!  And the great thing about it is it’s so easy.  The hardest thing about this recipe is that you have to cut up an apple.  Yes, it’s that easy!
I added some blueberries to this recipe because I love blueberries with my oatmeal, but unfortunately, I only had about a 1/4 cup left.  It’s time to get more blueberries…  Anyway, I would have added at least 1/2 cup if I’d had that much.  It was worth it for even a 1/4 cup of blueberries though.  You can pretty much add any fruit you have on hand to this recipe.
 All the dry ingredients (before adding the vanilla and melted butter).
 Pour the milk over top the whole thing, no need to stir!
 Baked and ready for consumption! (Nor sure how all the blueberries ended up on one side!!)

Baked Apple Cinnamon Oatmeal
(adapted from Simply Scratch)
1 large apple, cored & diced
2 cups rolled oats
1/3 cup raisins
1/4 cup frozen blueberries
3 Tablespoons brown sugar
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1/8 teaspoon salt
1 1/2 Tablespoons melted butter
1/2 teaspoon vanilla
3 cups milk

1. Mix apple, oats, raisins, blueberries, brown sugar, cinnamon, nutmeg and salt together in large bowl.
2. Mix melted butter and vanilla together and pour over oat mixture.  Stir to combine.
3. Pour oat mixture into an 8×8 in. baking pan. Pour milk over top of oat mixture.
4. Bake at 350° for 30 minutes or until most of the milk is absorbed.  Serve with extra milk. 4-5 Servings
