Last night we had tacos. I was tired of eating tacos with the meat mixture made from those little packages and wanted a taco mixture made from real ingredients. I was browsing on Pinterest and found this great blog: Eat Cake For Dinner. Just by the name of the blog you can tell it’s going to be good 🙂
So anyway, as I was browsing through the blog, I found a great recipe for taco meat. It isn’t made from a packet and it uses common ingredients. I knew I had to try it…soon!
(slightly adapted from Eat Cake for Dinner)
1lb. ground turkey
1/2 onion, chopped
8 ounces tomato sauce (1 can)
2 Tablespoons fresh cilantro, chopped
1 Tablespoon ground cumin (I used just under 1 T.)
1 teaspoon garlic powder
1/2 teaspoon chipotle chili powder/pepper
1/2 teaspoon chili powder
juice of 1 lime
1-2 Tablespoons water
salt and pepper to taste
taco shells/soft tortillas
Toppings: shredded cheese, tomatoes, lettuce, salsa, extra cilantro
1. Cook ground turkey in skillet with onions until turkey is browned and no longer pink. Add tomato sauce, cilantro, cumin, garlic powder, chipotle chili powder, chili powder, lime juice, and water. Add salt and pepper, if necessary. Stir to combine and simmer on low for 5-10 minutes, or until mixture is heated through.
2. Heat taco shells (according to package directions for hard shells, and in the microwave or skillet for soft shells) and fill with meat mixture. Top with cheese, tomatoes, lettuce, salsa and extra cilantro, if desired.
