How can you not fall in love with these little bites?

There quick and easy to make, plus they’re so adorable – and they taste great!

I actually whipped these up quickly after the hubby had already come home for lunch (he was early  that day) and we had them in time to eat with our lunch.  I put 9 of the 12 on the plate for the picture and then grabbed the other 3 for us to chow down on.  When we finished the plate, he couldn’t believe there weren’t more for him on the baking sheet!  …I think I’ll have to make a double batch next time.

These tots are delicious by themselves, but we love ketchup.  Yes, I know, ketchup sounds terrible on zucchini.  However, since these are called zucchini tots, like tater tots, we decided to try some ketchup on them.  They were good with the ketchup as well, but that is probably just because we are ketchup fanatics. Feel free to try them plain or with your favorite dipping sauce.

Zucchini Tots
Slightly adapted from: The Curious Country Cook
Yield: about 12 tots
1 cup zucchini, grated
1 egg
1/4 red onion, diced
1/4 cup cheese, shredded (I used mostly cheddar with a little Parmesan)
1/4 cup Panko bread crumbs
1/2 teaspoon parsley
1/4 teaspoon basil
salt and pepper to taste
1.Grate the zucchini.  Make sure to squeeze out all the excess water when finished grating.  Tots will become mushy if you skip this step.
2. Combine all ingredients in a bowl and mix well.  Using a cookie scoop, portion tots out onto a greased baking sheet.  Bake in a preheated oven at 400° for 15 minutes, or until set and beginning to brown.
