Banana Sundae Dessert

Just in time for the end of summer- the dessert to end all desserts.  Well, at least when we’re speaking about ice cream desserts.
I made this a couple of years ago for the hubby and haven’t made it since.  I’m not sure why, because it is soo delicious!!  Actually, I remember why I haven’t made it again until now…it’s so delicious and makes a 9×13 pan full!!  There is plenty of this dessert to share.
While you don’t need an occasion to celebrate in order to make this banana sundae dessert, I made it for the hubby in celebration of starting his PhD program.  I’m proud of all his hard work that has gotten him this far, and I know that he’s excited to start this final degree program.
This ice cream dessert is called banana sundae because of the layers of vanilla ice cream, bananas and hot fudge.  It’s topped off with a thick cherry vanilla layer of ice cream.  While I’m not a huge fan of cherries, I don’t think the ice cream has a very strong flavor to it.  You could always substitute for chocolate or strawberry ice cream instead though.  I decided to stick with the cherry vanilla since the hubby loves it.

12 ounces (1 package) vanilla wafers, crushed
1/2 cup butter, melted
1 Tablespoon sugar
6 cups cookies and cream ice cream, slightly softened
3 large bananas, thinly sliced
1 1/2 cups hot fudge topping, plus more for drizzling over each piece
6 cups cherry vanilla ice cream, slightly softened

1. Combine crushed wafers, butter and sugar.  Press into the bottom of a 9 x 13 in baking dish.  Freeze for 15 minutes.
2. Remove from freezer and spread slightly softened cookies and cream ice cream over top of crust.  (I didn’t need to soften the ice cream in my freezer – it was plenty soft already.  However, you can put it in a bowl in the fridge for 15-30 minutes to soften or leave it out on the counter for a couple of minutes, if it’s too hard to spread.)  Arrange bananas in a single layer on top of the ice cream.  Return to freezer and freeze for at least 30 minutes.
3. Remove from freezer and spread slightly softened cherry vanilla ice cream over hot fudge layer.  Cover and freeze for at least 6 hours or overnight.  Serve with warm hot fudge topping drizzled over top.  (I had to use a sharp knife to cut through the dessert in order to serve it, but it popped right out after that.)
