These little bites are so good and just about impossible to stop eating. It’s just too easy to pop one in your mouth again…and again…and again… They have helped sustain me through my pregnancy and constantly wanting to snack! They are a quick, tasty, and fairly healthy snack to eat if I’m just want a little something to munch on.
I love that they are so quick to make, and you don’t even have to turn on the oven. All you need is one bowl to mix the ingredients together and then a container to store them in once they are chilled and rolled into balls.
In case you’ve never toasted coconut flakes before, just toss them onto a baking sheet and bake at 325° until golden and toasted. You can also toast them in a skillet over medium-low on the stove, until golden.
No-Bake Energy Bites

Yield: 20-35 bites, depending on the size you make them
1 cup rolled oats (or quick-cooking)
2/3 cup unsweetened coconut flakes, toasted
1/2 cup peanut butter
1/2 cup ground flaxseed
1/2 cup chocolate chips
1/3 cup honey
1 teaspoon vanilla extract
- Combine all ingredients together in a small bowl and mix well. It may take a couple of minutes of stirring. Refrigerate 30 minutes or until well chilled. Roll into small balls and store in an airtight container in the refrigerator.
