Last time we went to my parents house, we left the baby monitor there. We didn’t think it would be a big deal since we can hear our little girl almost everywhere in our house. I actually kind of liked it for a little while because it was nice not to have that annoying monitor always around!
However, we quickly realized it wasn’t all that great when we couldn’t go outside together after she’d gone to bed. No grilling out after baby goes to bed, no toasting marshmallows over the still-hot charcoal grill, etc.
We had to make do with inside grilled food for a while. (Yes, I realize that we could have grilled if we ate before baby girl went to bed, but we rarely seem to be coordinated to grill out that early!)
Luckily for us, we were saved from non-grilling doom by our handy dandy indoor grill. It’s nice to have an indoor grill for those evenings when our charcoal grill seems like too much work or time (for the hubby anyway…I don’t use it of course!), or for when the hubby’s gone and I want to grill!
This zucchini and hummus panini is perfect for use on an indoor grill since you don’t have to worry about it slipping through the cracks. I’m sure it would be just as good on an outdoor grill, although a grill basket would be handy in that case.
I’d never had zucchini on a sandwich before but it was great and tasted extra special with my homemade hummus and leftover ciabatta rolls from these burgers. Another plus was that I think the hubby actually enjoyed these and might not have even missed the meat if I hadn’t told him…maybe.
Zucchini and Hummus Grilled Panini

Yield: 2 -3 sandwiches
2 small zucchini, thinly sliced lengthwise
1/2 of a bell pepper, thinly sliced
3 slices bread/ciabatta rolls
6 Tablespoons roasted red pepper hummus (use my homemade here)
1 cup fresh spinach
1 medium or large tomato, thinly sliced
3 slices pepper-jack cheese
- Pre-heat an indoor grill. Season zucchini slices with salt and pepper to taste and place on grill with bell pepper slices. Grill for 5 minutes, or until tender (if closing the lid) or 5-7 minutes on each side if on an outdoor grill.
- Spread 1-2 Tablespoons of hummus on bread, top with 1/3 of the grilled zucchini and peppers, sliced tomato, spinach and 1 slice cheese. Repeat for remaining sandwiches. Place sandwiches on the grill for 3-5 minutes or until warm throughout and cheese is melted.
