{Fast & Easy} Healthy Oatmeal Banana Cookie Bites

I debated sharing this recipe with you.  Not because it wasn’t good.

I was originally going to post this recipe last week.  But then I just decided that I shouldn’t.  Again, not because they weren’t good though.  On the contrary, the hubby and I (mostly me) gobbled up all of the cookie bites.  I had to make another batch right away.

I made another batch and then didn’t eat all of them because, let’s face it, I really didn’t need two batches of cookie bites for a snack.  That was when I realized the problem with these bites.  They don’t keep very well – they get a little tough and chewy.  Luckily, this isn’t too much of a problem because this recipe makes a very small batch and one hungry person could probably eat them all, hypothetically of course.

I decided to share the recipe because only a couple of days after the first two batches, I knew I had to make another batch.  It was then that I realized this recipe was too good not to share.

5 Thoughts about Healthy Oatmeal Banana Cookie Bites:

  1. There are 3 ingredients.  Seriously.  This is a (no-brainer) winner in my book.

2.  Did you see above – three ingredients!!  This = super, lighting fast to make.  If you only literally have 1 minute to spare, you can whip these babies up and get them ready for the oven.

  1. Speaking of the oven, I love that I can pop them in my little electric toaster oven.  It usually doesn’t do well with cookies, muffins, etc. but since these are a different sort of cookie they baked just fine in the toaster oven.

4.  They are a great, healthy snack.  I can pile my mouth full and not feel guilty because I know I am {mostly} eating oats and bananas. (When I asked my husband to guess the ingredients, he guessed that there was brown sugar and honey in these bites.  Nope – no added sweeteners – that’s how tasty these bites are.  They might fool you into thinking they’re the real deal.)

  1. They are amazing right out of the oven. Eat them all right away, when they’re still warm from the oven.  Your belly will thank you.  Also, they don’t make the best leftovers.

A little disclaimer before I jump into the recipe.  Don’t you hate recipes that claim to be something they are not?  Like “this tastes just like a Reese’s peanut butter cup but it doesn’t have any sugar!” Um, yeah, I really don’t think that you can make anything taste like Reese’s without using some sugar.

When I made this recipe, I was searching for a healthy snack that would satisfy my sweet tooth.  I was trying to help the hubby eat healthy, since he always complains that I make too many unhealthy desserts to tempt him!  (Interestingly enough, he came home with two containers of ice cream after work that day.  I guess we were both thinking of each other!)

All that to say that these are sweet, tasty, and healthy, but no, they don’t taste quite like an oatmeal chocolate chip cookie. That’s because they are not.  But they are still way too good and too easy not to try.

Have an after-school snack.  Or a before-dinner snack.  Or whip these up for a mid-morning snack.  Or a bedtime snack.  You get the picture.  These bites are fast and delicious.  Eat them.

Healthy Oatmeal Banana “Cookie” Bites

Adapted from: Blogilates
1 large, very ripe banana
1 cup old fashioned oats
1/4 cup baking chips (I used half white chocolate and half peanut butter chips)

Directions
1. Blend oats up in blender or food processor until fine.  In a bowl, mash bananas.  Add oats and stir until well mixed.  Fold in white chocolate and peanut butter chips.
2. *Using a cookie scoop, measure out dough and place cookie balls on a parchment or silicone-lined baking sheet.  Bake in a preheated oven at 350° for 15 minutes. Enjoy immediately!
*No need to space the cookies very far apart on the cookie sheet because they don’t really rise.

  1. Hi Laura,Thanks for sharing the recipe. I know a lot of people are whipping up these little banana bites and you are right…I always see people claiming that they taste “just like…”Uh, no, no they don’t! LOL…They are super yummy, but if you think they are going to taste like the sugar and butter filled recipe on the back of the oatmeal box, you are SO wrong! Personally, I love the healthier stuff. Plus, if you go into knowing they have their own flavor, you won’t be disappointed! 🙂

    1. That’s exactly right! I don’t know why people say they taste like the real deal because they are setting themselves up for disappointment. However, I agree that healthy foods have a delicious and unique flavor!
