{Healthy} Chopped Apple Bread

Apples.  I can’t get enough of them lately.  Everything we have been eating has had apples in it.  Salad, bread, desserts, you name it!

I love summer, and I am not ready for it to be completely gone yet, but am loooving apple season right now.  We have a kind church member who has given us bunches of apples off their apple trees.  (I practically don’t have to go to the grocery store anymore due to theirs and others’ generosity.)  So I’ve been making everything apple imaginable.

I think this chopped apple bread is my favorite of anything “apple” that I’ve made lately. It’s sweet from the apples, easy, and mostly healthy so I don’t have to feel bad about eating it.

And I don’t feel bad giving it to my 10 month old daughter when she sits and whines and begs for some.

I don’t know what else to say about this bread except that it is easy, super delicious, and only dirties one mixing bowl (+ the pan you bake it in).  I don’t think you can go wrong with this bread.  It would be great for whipping up quickly and bringing to a fall gathering, a sick friend or neighbor, or just for breakfast!
As a side note: make sure you use sweet apples, I think it adds alot to the flavor of the bread.

{Healthy} Chopped Apple Bread

Ingredients
  • 1 cup white whole wheat flour
  • 1/2 cup all-purpose flour
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon kosher salt
  • 1 round teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/2 cup sugar
  • 3/4 cup unsweetened applesauce
  • 2 eggs, slightly beaten
  • 1/2 teaspoon vanilla extract
  • 2 cups peeled, diced apples (I used Arkansas Black)
Instructions
  1. Mix together the flours, baking soda, salt, cinnamon, nutmeg, and sugar.  Add the applesauce, eggs, and vanilla extract and stir gently til combined.  Gently fold in chopped apples. Grease a small baking loaf pan with cooking spray.  Pour batter into the pan.
  2. Bake in a preheated oven at 350° for 60-70 minutes, or until toothpick inserted in center comes out clean.  Cool for about 10 minutes in the pan before removing to a cooling rack.

  2. I made this tonight! I did a 1.5 recipe and put the batter in the only two pans I had: a spring-form pan and a ramekin! I ended up using all white flour (life of a poor college student) and used one banana, one applesauce cup, and 2 T. oil in order to reach the liquid ingredient quota. I also threw in extra cinnamon and vanilla, because why not!? Using 1/3 of the sugar as brown sugar instead of white was a nice touch too. It might have been nice to make a oat-brown sugar-butter-cinnamon streusel for the top. But it turned out lovely, and nice fresh! Thanks for the easy recipe 🙂
